Spanish ratatouille

Spanish ratatouille is a staple of our cuisine, suitable for vegans, vegetarians and anyone who enjoys food. Prepared with a combination of selected vegetables (aubergine, courgette, onion, peppers and potatoes) with the best olive oil, all simmered in a tomato base to which we add a pinch of sugar to reduce its acidity. Perfect for any time of the year.
